    Cucumber dill salad 1 large cucumber thinly sliced, 1 cup sour cream, 1 tsp lemon juice (about 1/2 of large lemon squeezed) 1TB fresh dill, salt and pepper to taste. We like to add red onions to this recipe about 1/2 large onion. Refrigerate for 2 to 4 hours. Sub Greek yogurt!

3-4 cucumbers 2 green onions ½ cup mint leaves For the dressing: ¼ cup yogurt / thick / 1 clove garlic 2 tablespoons lemon juice 2 teaspoons water 1 teaspoon grated lemon peel Mix in a salad bowl cucumber, onion and mint, cover with plastic wrap, and store in refrigerator to cool.
