Twice-Baked Cauliflower: Califlower 4 oz. low fat cream cheese 1/2 cup low fat sour cream 1/4 cup green onions 1/4 cup fresh parmesan cheese 1 cup reduced fat shreadded cheese 6 bacon strips Steam califlower, mash it and mix in cream cheese, sour cream, green onions, 3/4 of bacon, parm cheese. Top with shredded cheese and rest of bacon. Bake @ 350 for 30-35 minutes.
Corn casserole: (15 oz) can whole kernel corn, drained 1 (15 oz) can cream-style corn 1 package Jiffy corn muffin mix (8 oz.) 1 cup sour cream ½ cup butter, melted 1 cup shredded cheddar cheese or your favorite
Green Beans with Bacon, Onion and Garlic My dad's fresh green beans are always cooked this way at my house but I don't use quite as much bacon as listed. I often use chicken or beef broth instead of water.
Loaded Potato Casserole: 2 (16oz) containers sour cream 2 cups cheddar cheese, shredded 2 (3oz) bags real bacon bits 2 packages Ranch Dip mix 1 large (28 - 30oz) bag frozen hash brown potatoes - shredded kind Combine first 4 ingredients, mix in hash browns. Spread into a 9x13 pan. Bake at 400 for 45-60 minutes. *I divided the potatoes into 3 small 7x7 disposable foil pans and froze them. I wrapped them with plastic wrap and then foil.*
Super Easy: 2 cans Bush's, 2/3 cup brown sugar, 1/3 cup ketchup, 1/8 tsp garlic powder, 1 small onion, (I also put worst sauce to taste and liquid smoke) - mix all of these ingredients in baking dish - add bacon, I used the precooked and put it in the micro (I hate it when my hair smells like bacon, even for a bbq!) - cook 350 uncovered for about an hour

Cheesy Cauliflower Pancakes Cheesy Cauliflower Pancakes 1 head cauliflower 2 large eggs 1/2 c cheddar cheese, grated 1/2 c panko 1/2 t cayenne pepper (more of less to taste) salt olive oil Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste
Green Bean Bundles I make these every time we have a potluck. I get the thick cut maple bacon, and the fresh green beans, lay out the bacon strip, put a teaspoon of brown sugar on it, put a bundle of about 5-6 green beans, a half teaspoon of butter, then roll up and 'pin together' with toothpicks, and bake until the bacon is done. They stay good in a crockpot on low. Everyone loves these!
