HEALTHY CROCKPOT SPICY HONEY CHICKEN Ingredients: 1 package boneless skinless chicken thighs (you should get about 8 thighs per package) 1 teaspoon kosher salt 1 teaspoon fresh cracked pepper 1 teaspoon red pepper flakes 1 teaspoon chili powder 2 teaspoons paprika 2 teaspoons garlic powder 1/2 cup honey 2 tablespoons apple
Honey Spiced Glazed Chicken Spicy Honey Glazed Chicken: 1 package boneless skinless chicken thighs (you should get about 8 thighs per package) 1 teaspoon kosher salt 1 teaspoon fresh cracked pepper 1 teaspoon red pepper flakes 1 teaspoon chili powder 2 teaspoons paprika 2 teaspoons garlic powder 1/2 cup honey 2 tablespoons apple cider vinegar Mix spices together and set aside. Mix honey and cider vinegar and set aside. Un-tuck chicken thighs so they are flat. Cover both sides in seasoning, set flat onto sheet pan. When all chicken as been seasoned put under broiler* Cook for 5-7 minutes on one side and flip. Cook for a 5-7 minutes on other side. Flip again and then baste the chicken in honey/cider mixture. Be sure to really get the chicken covered. Add to oven again and let it cook under the broiler for a few minutes until the honey starts to thicken up and glaze. It may smoke a little but this is completely normal.

No-Bake Energy Bites - ******** ½ cup coconut flakes... 1 cup old-fashioned oats.. ½ cup brown rice crisp cereal... ½ cup ground flaxseed... ¼ tsp. cinnamon... ½ cup nut butter (I've used almond butter and peanut butter, as well as a combination of the two)... ⅓ cup honey.. 1 tsp. vanilla... ¼ cup mini chocolate chips (can substitute dried blueberries or raisins).. ==Directions== ***Toast coconut in a small skillet over medium heat, 4-6 minutes, stirring occasionally and being careful not to burn it. It's done when some of the flakes are lightly golden.... ===In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.,,, ==In a liquid measuring cup or bowl, whisk together nut butter, honey, and vanilla.... ***Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips.... Chill in refrigerator for 30 minutes.... ***Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it. Store in an airtight container in the refrigerator for up to 1 week.

Creamy Roasted Red Pepper and Cauliflower Soup with Goat Cheese. No goat cheese but Gruyere and Gouda substituted nicely. Easy to make if you can successfully roast and peel bell peppers the first time around. Doubled the recipe and added white beans instead of extra cauliflower to help thicken and add protein without overpowering the bell pepper flavor. Delicious with garlic bread

Mini Deep Dish Pizzas -16oz package store-bought pizza dough (I used Trader Joe's Garlic & Herb) -8-12oz pizza sauce -8oz fresh mozzarella, cut into 24 slices -1/2c freshly grated Parmesan cheese -pizza toppings of your choice -Italian seasoning ~~Preheat oven to 425 degrees and spray cavities of a muffin pan with cooking spray. Remove pizza dough from packaging and allow it to come to room temperature on a floured surface. Using a rolling pin or your hands, roll out into a thin layer. Using either a round cookie cutter, an egg fry ring, or even an empty can, cut rounds out of the dough. Using your fingers, stretch the dough without tearing and press into muffin cups. Next, assemble pizzas. I like to put a small slice of fresh mozzarella in first to prevent crust from getting soggy. Top with 1-2tbs of pizza sauce, another small slice of mozzarella, and some parmesan cheese. Sprinkle with a little Italian seasoning and add your favorite pizza toppings. Bake for 15-20min, or until crust is golden brown and cheese is melty and bubbly. *Other recipes like Buffalo Chicken Pot Pies and Baked Shrimp Rangoon.
