Asian Edamame Salad with Cilantro and Toasted Almonds
Asian Edamame Salad: 3 cups shelled edamame beans, cooked and cooled 1 red pepper, diced 1 orange pepper, diced 1 cup of shredded carrots 1/2 head of purple/red cabbage, shredded 3 cloves of garlic, minced 1/3 cup of reduced sodium soy sauce 1 tsp of ginger 1/2 cup of fresh chopped cilantro 1/4 cup of toasted almonds
Creamy Baked Corn. I made this for a family reunion and got raves about it. There was none left for me to take home! I only added bacon and scallions as the topping instead of the french fried onions as the recipe suggests.
homemade salsa: 5-6 roma tomatoes, chopped 1 small onion, chopped 1/2 cup fresh cilantro, chopped 2 serrano or jalapeño chiles, seeded and minced 1 clove garlic, minced 2 tbsp. freshly squeezed lime juice, salt and pepper to taste. add everything together and let sit overnight for flavors to meld.
Roasted cabbage. INSANELY delicious, easy, inexpensive healthy. (1 t. olive oil, 2 T. bacon bits, 2 T lemon juice, 1 T. worcestershire, 1/4 t. salt, 1/4 t. pepper, 1 Cabbage, quartered, individually wrapped. Bake at 425 degrees for 20-30 minutes)
