    Finnish Pulla -- Tips: put tinfoil on the rack below the bread to reduce burnt bottom. Half way through cook time put a piece of tinfoil on the top or it'll get too brown. Look at comments on the website for variations on the recipe.

    Finnish Pulla Recipe | Pulla (Finnish pronunciation: [ˈpulːɑ]; Swedish bulle or kanelbulle) is a mildly-sweet Finnish sweet roll or dessert bread flavored with crushed cardamom seeds and occasionally raisins or sliced almonds. Braid loaves (pitko) are formed from three or more braided strands of dough. The braids may also be formed into a ring. These braided strands or rings are typically coated with melted butter and then sprinkled with white sugar or almonds.

    Pulla. Finnish cardamom bread. This is the best, most authentic recipe that I have found. My Finnish Mother in Law loves to brag about my Pulla. I like to use twice as much cardamom, and you can substitute half the sugar for Splenda and it still turns out great. I like to roll (and stretch) the dough out into sheets and slather with butter, brown sugar, more cardamom, along with some cinnamon, currants, and chopped almonds. I then roll it up tightly and cut into little swirls (rolls). Rolls I do at 375 for about 16 minutes. You can also take the filled log, connect the ends to form a ring, and then carefully snip in three rows around the log so that when it is baked it provides a braided appearance. You will have to mess around with baking time, though, as a filled log or wreath takes much longer than the original plain or braided loaf. Garnish with pearl sugar (you can get it at Ikea, if your local market doesn't carry it). This is no quick baking project, but you will be rewarded with a wonderful aroma and fantastic food to share.

Finnish Potato Flat Bread: 300g mashed potato, cooled 100g whole spelt flour 1 large free-range egg Pinch of salt You can use left-over mashed potato. Preheat oven to 220C. Mix all ingredients in a bowl and divide the dough into 4 portions. Place the portions on a baking tray lined with baking paper and flatten each portion with flour dusted fingers into round disks. Prick the breads with a fork and bake for 15 minutes. Serve warm with butter, smoked salmon and fresh dill.

Healthy cookie: no butter, no sugar, no eggs, no flour...will have to try making these with my little guy.
