Fruit filled German pancakes made in muffin tins - these are really fun, but you have to make a lot *update* I made 2 1/2 batches and it fed 6 adults and 4 kids with probably a dozen leftover. Each batch does approx. 18 in a regular sized muffin tin. The triple berry sauce was delicious and it saves in the fridge for at least a month! I strongly identify myself as a pancake connoisseur, and these are the best pancakes I've EVER had. I mean, I'll take pancakes over a steak dinner any day of the week! The only thing I did differently was that I used 1 1/2 tsps of coconut flavoring and 3/4 c of regular milk. I also topped it off with homemade blueberry syrup and coconut flakes. Seriously, I almost cried! :D
A puffed Dutch pancake with lemon syrup! I made this on Sunday morning and it was awesome! I used a glass pie pan instead of the cast iron and I think it was a little too small and made a thicker pancake. I would recommend the 12". The kids were not to fond of the lemon syrup and preferred regular, but I think its a little more adult in flavor.
