Zucchini Fritters!!! For my adaptation of this recipe I mixed: 2 cups grated zucchini, 1 tbsp basil, 1 tsp garlic, 1/4 cup chopped bell pepper, 1/3 cup Red Mill Gluten-free flour, 1 egg, 1/2 tsp pepper, 1/4 tsp salt, a sprinking of Daiya dairy-free mozzarella *I fried it on medium heat
Zucchini Chips 4 Ways - The Copper Collective-tried salt and vinegar, and parm. Did not use bread crumbs. Must have sliced too thin because 30 mins was way too long. Keep an eye on them. Great for a chip craving!
