Line pie dish with crust as directed on package for a 1-crust filled pie. Bake until set, about 9 minutes. Cool. . 1 Onion (cut into even 1/2-inch thick rings) 2 Tbsp Olive Oil Salt Reduce oven temperature to 400F. Heat the olive oil in a sauté pan over medium heat. Crustless Zucchini, Corn and Tomato Quiche - I will replace the feta with low fat mozz, canola spray for the buttering the pan, use egg substitute, non-fat evaporated milk for the cream and almond milk for the whole cow's milk,& low fat parmesan. I may add some cooked vege bacon. Can be a good meal for vegetarian night!

I've made these for years so going to go ahead and put the recipe here. I use stove top stuffing and flatten mine a little to make them crispier. We've never served with dipping sauce either. Fantastic and the kids liked them when they were little. One of those, get the kids to eat veggies recipes// Spinach spinach spinach spinach!! :)

Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
