Roasted Domino Potatoes

Inspired by a recipe from chef Francis Mallmann, author of Seven Fires (Artisan), these crisp-tender potatoes are redolent of bay leaves. Roast them hours before the party starts and serve at room temperature, or rewarm just before serving.

roasted red potatoes- quarter the potatoes, toss in olive oil, salt, pepper and rosemary & arrange as shown. add garlic clove in the middle of the potato quarters. add half a teaspoon of olive oil on top of each garlic clove & bake at 375 for 25 minutes

Muffin-Pan Potato Gratins: love that these are individual portions but I would HAVE to add cheese! Probably a mixture of gruyere & parm on top so it can get brown & crispy. Yum!!

Mashed Potatoes in a muffin tin, add own yummy ingredients (butter, bacon, chives) into greased pan use fork to make x's, and brush with olive oil. Bake @ 375 until golden brown on top and voila yummy alternative to fries or wedges, healthier than store bought stuff! Good way to portion control use mini muffin tin! Crisp on outside and soft potato insides..
