Very similar to Chipotle Burrito Bowls. I served over rice with sour cream and guacamole and it was a great meal. Doesn't need long in the crock pot if you want to preserve all the flavors. Would be great for a weekend where you can keep an eye on the cooking process.
Oven-Fried Parmesan Zucchini. Easy to make: just slice your zucchini, dip in milk (sounds weird, but it works), then dip in mixture: 1 cup breadcrumb/ 1 cup parmesan cheese/ 1 tsp garlic salt/ pinch of pepper. You can also make a dipping sauce: 1 cup sour cream, 2 tbsp mayo, 1 tsp of worcestershire sauce (add more for a kick). Enjoy!
