Twice Baked Bake Potato (my adaption) Ingredients: 6 large baking potatoes 8 tablespoons butter 2 slices of bacon per potato 1 medium onion, chopped 1/4 Cup Milk 1/4 Cup Cream 1 egg 1/2 teaspoon salt 1 cup cheddar cheese (Added to Recipe Book)
These are started with baby red potatoes quartered and then boil with the skins on until tender. Drain lightly mash with desired amounts of whipped cream cheese, butter and garlic. You can add variations of crumbled cooked bacon, dill, sour cream, shredded cheese and/or chives to the potatoes after mashing. These are best served with just butter on top!
