Today I had my little group meet up with some fellow mommies. We had some snacks, played outside (it was quite hot at 83°), hunted for Easter eggs, and played in the sand box. But, I think the most successful part was the frozen Easter egg popsicles I made for the kids. I only used plain fruit juice, but when frozen in an egg, everything tastes better apparently. The best part is they are relatively simple to do; you just need a few items. To make the popsicle's you will need: Fruit juice Eco Friendly Easter Eggs (They are made from corn starch are food safe and work great!) Lollipop sticks A large nail and thumbtack Small funnel or piping tip to fill the eggs First, tip the eggs upside down and poke three holes in the bottom. Two of these holes are for letting the air escape when filling the egg, the third one should be in the center of the bottom. Make this center hole bigger using the large nail. You will need it to be as big as the popsicle/sucker stick. Once that is done, and you have your egg carton full of "hole-y" eggs, use the piping tip to fill each one until almost full, and then poke in the popsicle stick and place in the freezer until firm (I froze mine overnight). When you are ready to eat them, let them sit out for a second, or hold the top part in your hands to warm it up and open the egg on up. The kids enjoyed them right out of the plastic egg, and when they got down to the bottom part, the eggs easily slipped on out of the "shell" so they could finish the rest. Is this an Easter craft or an Easter treat? It's both! These Peeps Houses are almost too cute to eat. Whether you eat them or not, they're fun to make. You'll need: Peeps Graham Crackers (I recommend name-brand for this- they're a little thicker and sturdier) Frosting/Icing (I used some homemade buttercream frosting that I had left over from a cupcake project; something thick/firm is suggested. The original instructions said that Wilton's Cookie Icing would work, but one reader reported that it did not work for her). Newspaper or parchment paper Easter decor, such as Easter grass, candy eggs, etc. Lay out the newspaper or parchment paper. Break the whole graham crackers in half. You'll need 3 whole crackers, broken into 6 halves, for each house. "Glue" the walls to the floor with icing, and set aside. Glue the two halves of the roof together and set aside (prop if necessary). As soon as the walls and roof dry separately (an hour or so), you can glue the roof onto the walls. Let dry and decorate as desired. I thinned some frosting with a tiny bit of milk and piped it over the roof seams for melting snow. This spring has been so cold, I decided it wasn't much of a stretch. The houses will "keep" pretty well for several days. They start to soften a little (think how a graham cracker loses its crunch if the wrapping is left open) over time, but my little taste testers thought they were fun and delicious. The "grass" in this house is edible Easter grass that I found at Target. My family loves deviled eggs. So much so, that I can make 3 dozen eggs, which makes 72 deviled eggs for a party--and they're ALL GONE by the end of the party! That's a LOT of eggs! For Easter, we make them festive. We color them, like Easter eggs! I remember the first time my mother made deviled eggs colored like Easter eggs. I thought they were the prettiest eggs I'd seen! They're lots of fun to make, too! Ingredients: 10 hard boiled eggs About 1/2 cup mayonnaise Put the eggs in a pot and cover with water. Bring to a boil, turn down the heat to low, cover and simmer for 15 minutes. After 15 minutes, cool the eggs with running cold water. Peel the eggs. Then cut them in half. It's okay if some of them tear a little, the filling will camouflage that. Or just eat that one. Put the yolks in a separate bowl. It doesn't matter if the yolks turn a little darker around the outside--that happens when the eggs aren't cooled thoroughly right after cooking. Next, you'll need some food coloring. Make the colors just as you would easter egg dye. A teaspoonful of cider vinegar in each glass helps. I used about 3 drops of food coloring in each glass. Take the eggs out when they're a pretty pastel color. Drain them on a paper towel. Mash the yolks with a fork. When they're uniformly crumbly, add about a 1/2 cup mayonnaise. Scoop from your measurement and add half at a time. Make it as creamy as you like. When it's nice and creamy, you can add any extras--mustard, minced chives, freshly ground pepper, bacon bits, etc. We like it plain. You don't need to add salt, the yolk is salty itself. Time to fill the eggs! I've had this Super*Shooter forever, it seems, but it still works well. If you don't have one, you can fill the eggs by hand with a teaspoon. Put a little bit of the yolk mixture in each egg, so you don't run out, then go back and add a little more on top. Aren't they pretty! Garnish with a little bit of paprika. Pour a small amount into the palm of your hand, then add a pinch to the top of each egg. There's a psychedelic tie-dyed one--the blue one in the middle. That happens when you add more food coloring to the glass with the eggs already in the water. That's kind of fun. You can be creative in your egg coloring! My brother says if you get to the party and you see the eggs, you'd better get one right away--because when you turn around to get one later, they might be all gone! I'm a little late with my Easter post but I couldn't wait to share these with you! I was inspired by Bakerella to make these adorable cake pops. She has such wonderful, unique, adorable ideas for little cakes on a stick. I decided to do a more simple decoration and I ended up loving them! The technique is very easy, though I did add a bit too much frosting to the cake so the texture wasn't the best, but I will definitely try these again! And these are simple enough to make with your kids and they would have so much fun! I took these to family Easter where everyone said they were adorable and it turned out that the aunts thought they were so cute that they hid them from everyone so they could enjoy these themselves! So funny! The original cake pop technique and recipe can be found here. I used strawberry cake mix and cream cheese frosting for these pops. For decorating the pops: White Candy Melts (from Michael's) Sanding Sugars (assorted colors from Surfas, 1 lb. for $3.96) Jimmies (assorted colors from Surfas, 12oz. for $3.55) Paper Lollipop Sticks (from Michael's) Styrofoam Block (from Michael's) Fake Grass (from Michael's) White Square Container * Shape the cake balls into an egg shape. * Melt candy, let cool slightly. Dip in candy coating. Tap lightly to let extra drip off. * Sprinkle entire egg with sugar or jimmies. Use a bowl sprinkle over. * Let sit in the styrofoam block until dry. * Repeat with varying designs and colors. Once dry, cut styrofoam to fit container. Add grass on top of styrofoam. Insert cake pops into styrofoam and cover stick with grass. You should definitely try these and check out Bakerella to see all the different shapes, animals and decorations she shows you how to create. Wonderful!

Kool-Eggs... Dye easter eggs with kool-aid (NEVER buying egg dye again!) This is really all you need, because Kool-Aid has citric acid in it. No need for vinegar! Add one packet of Kool-Aid to 2/3 cup of water and stir. That's it. Warning yellow is too lite alone - add a little orange, also grape is way too dark (almost black) so add some blue to it.

In the 90s, I dyed my hair with Kool-Aid. Last year, I dyed yarn with Kool-Aid. And this year, we're dyeing Easter eggs with Kool-Aid. I mean, why not? It smells fruity and awesome. It makes me nostalgic for hot summer days at the pool. Time to make some Kool-Eggs. Not only will the Kool-Aid make your kitchen smell super sweet, you'll get some fantastically vivid results. You can usually pick up five Kool-Aid packets for $1.00, so this is a fun and inexpensive way to change up your annual egg dyeing adventures. Kids will find this soooo exciting. So let's start with the eggs. Every year, I seem to forget exactly how long to boil them, so here are the directions I use. To make things extra simple for you. After your eggs are ready to go, it's time to find some small containers and get your Kool-Aid packets ready to go. This is really all you need, because Kool-Aid has citric acid in it. No need for vinegar! Add one packet of Kool-Aid to 2/3 cup of water and stir. That's it. I used both lukewarm and cold water and it didn't really make a difference with how our eggs turned out. Keep in mind that Kool-Aid powder is pretty messy, so you should do all of the mixing over your sink to prevent your counter tops from turning different colors the next time you wipe them off. (Not that this happened to me or anything.) Finally, you'll need to round up a willing helper or two to do the dipping. You don't have to leave the eggs in the dye cups very long before you'll see them become quite brightly colored. The eggs will smell fruity at first but after they dry, they smell and taste like normal hard-boiled eggs. I will warn you about a couple of colors/flavors that had less than desirable results. Lemonade on its own comes out too light (as does the Pink Lemonade) and Grape will quickly turn dark gray-ish. I remedied this by mixing things up a bit. To get a nice yellow, use one packet of Lemonade mixed with a quarter to half packet of Orange. To get light pink, use one packet of Pink Lemonade and add a little bit of Cherry or Strawberry. To turn the gray/brown Grape egg into an indigo color, add some Berry Blue to the mix. Here's what your Kool-Eggs will look like. Hardboil your eggs normally, and then, when theyve cooled enough to handle, roll the eggs around on a hard surface to crack them. You dont want to crack them too hard - you still want the shell to stay on the egg. But you want to develop a nice overall cracked look. Then re-boil in water with food colouring of your choice.
