The skin is quite flavorful but if you eat your chicken skinless, you’ll be relying on the potatoes and mushrooms for most of the impact. Pile the rosemary leaves, garlic, 2 teaspoons salt and the red pepper flakes on a cutting board, then mince and mash into a paste using a large knife. Transfer the paste to a bowl. Stir in the juice of 1 lemon and the olive oil. Add the chicken and turn to coat. Heat a large cast-iron skillet over medium-high heat. Add the chicken, skin-side down, cover and cook until the skin browns, about 5 minutes. Remove chicken from pan; add the mushrooms and potatoes to the skillet, place chicken over mushrooms and potatoes and drizzle with any marinade remaining in the bowl and the juice of the remaining lemon. Sunday, November 3, 2013 Green Chili and Cheese Chicken This is a super-easy weeknight recipe with Mexican flair. Server with Spanish rice, refried beans, and warm tortillas! Green Chili and Cheese Chicken makes 4 servings Ingredients: 4 boneless, skinless chicken breasts 1 1/2 cups shredded pepperjack cheese 1 (4 ounce) can diced green chile peppers, drained 1 tablespoon dry fajita seasoning Instructions: Preheat the oven to 350 degrees F (175 degrees C). Coat a 9 inch square baking dish (or similar size) with cooking spray. Make a deep cut into the side of each chicken breast half to form a pocket or 'purse'. Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each one. Close, and secure with a toothpick so that the cheese does not escape while in the oven. Place the stuffed chicken into the baking dish. Season with Fajita seasoning, and then sprinkle the remaining cheese and chilies over the top. Bake uncovered for 30 minutes in the preheated oven, until the chicken juices run clear, and cheese is melted and lightly browned.

Sherry’s Aussie Chicken 4 boneless skinless chicken breasts, pounded to 1/2 inch thickness (sometimes it’s easier to filet them, instead) seasoning salt 6 slices bacon, cut in half (What is it with me and all the bacon recipes this week?!) ¼ cup regular mustard ¼ to 1/3 cup honey 2 tablespoons mayonnaise 2 teaspoons dried onion flakes 1 cup sliced fresh mushrooms 2 cups shredded Colby/Jack cheese Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes. Meanwhile, cook bacon in a large skillet until crisp. Remove bacon. ***Do not discard grease.*** Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Move chicken to a 9×13 pan. In a small bowl, mix the mustard, honey, mayo and dried onion flakes. Apply the honey mustard to each breast, then layer with mushrooms, bacon, and shredded cheese. Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done. (Be sure to cut into a breast to see that it is fully cooked before serving to guests who will find raw meat in their main dish. Ask me how I know…) Serve with honey mustard sauce.

Crispy Cheddar Chicken Time: 15 minute prep + 35 minutes baking Yield: 7 servings Chicken: 4 large chicken breasts 2 sleeves Ritz crackers 1/4 t salt 1/8 t pepper 1/2 C milk 3 C cheddar cheese, grated 1 t dried parsley Sauce: 1 10 ounce can cream of chicken soup 2 T sour cream 2 T butter Directions: 1. Cut each chicken breast into 3 large chunks. 2. In a small food processor grind up the ritz crackers. 3. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the 1/4 t salt and 1/8 t pepper into the cracker crumbs and stir the mixture around to combine. 4. Dip each piece of chicken into the milk... then the cheese. Press the cheese into the chicken with your fingers. Some of it will fall off when you add it to the cracker crumbs, don't worry about it. Press the cheesy chicken into the cracker crumbs and press it in. By the time you are coating the last piece of chicken, the dish you are using for the crumbs will be full of cheese. Don't let it get you down. Once the cheese melts in the oven it will adhere nicely to the crumbs and the crackers. 5. Spray a 9x13 pan with cooking spray and lay the chicken inside the pan. 6. Sprinkle the dried parsley over the chicken. 7. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy. 8. Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken. Enjoy!
Crispy Cheddar Chicken I Made this and my family really liked it. I used Ritz crackers with herbs instead of the plain Ritz crackers and it turned out really well. I had several more chicken breasts than the four that the recipe called for and one (2-cup) package of shredded cheddar was enough for the recipe, although I did use two sleeves of Ritz. If you are following the recipe, then one sleeve may be enough. It is going in my favorite chicken recipes! ~AE
