I think I can tweak this recipe to make it low bad carb. Lose the cream, use low fat condensed. Add an egg to increase iron + protein and use a small amount of honey or maple syrup or some fruit concentrate to replace the sugar. Coconut Quinoa Pudding - serves 4-6: 1/2 c. of quinoa, 1/2 of a vanilla bean, 1/5 cup of sugar (sub stevia?), 1 19 oz. can of coconut milk, and pinch of salt. Optional: top with berries and/or chopped toasted nuts.
