Chipotle Cilantro Lime Rice 1 cup Basmati or any long grained rice, 1 tsp oil or butter, 1-2 small limes, 3 tbsp cilantro, salt to taste. Soak rice for 10 minutes (keeps from getting mushy) Heat oil and rice together. Add lime juice and stir. Add water and salt. Cover and cook 10 minutes. Add chopped cilantro, toss and serve.
