Sweet Potato Stacks - Yessss! New favorite side. Didn't end up using the recipe (all the ones I could find were for a creamy stack) so instead I just cut the kumara up reeeeallly thin, rubbed them all with olive oil, salt, pepper, and smoked paprika. Then I stacked them up and roasted them until the edges were crispy and the inside was soft. In the meantime, fried up a bunch of sage leaves and crumbled them on top of the stacks once they were finished. DEFINITELY one to make again.
