Parmesan Potato Stacks 2 garlic clove 1 shallot 2 C half 1-1/2 C Parmesan freshgrated 1/2 tsp salt 1/4 tsp pepper 1 T fresh thyme 3-4 potatoes 400° dice garlic Place bowl with half 1 C parmesan saltpepper slice potato 1/8 thick rounds Stack 7-8 into each muffin tin spoon half mixture over potato careful not to overflow cover pan with foil bake35min top with Parmesan bake 10-15 min til cheese is golden potatoes tender liquid absorbed cool 5 min remove & serve
Sweet Potato Stacks - Yessss! New favorite side. Didn't end up using the recipe (all the ones I could find were for a creamy stack) so instead I just cut the kumara up reeeeallly thin, rubbed them all with olive oil, salt, pepper, and smoked paprika. Then I stacked them up and roasted them until the edges were crispy and the inside was soft. In the meantime, fried up a bunch of sage leaves and crumbled them on top of the stacks once they were finished. DEFINITELY one to make again.
