Wonton Jalapeño Poppers Jalapeno Popper Wontons 1 package refrigerated square wonton wrappers 1 8-ounce package cream cheese, softened 3 jalapenos, seeds and ribs removed, finely chopped 1/2 cup shredded cheddar cheese Vegetable oil for frying Coarse salt 1. In a bowl, combine cream cheese, jalapenos, and cheddar cheese. Arrange wontons in a single layer on a baking sheet. 2. Add 1 teaspoon of the filling to the center of each wonton (don't overfill them). Dip your fingers in a bowl of water and run your wet fingers around all edges of each wonton. Fold the wontons over the filling, pinching the edges to seal to make a triangle and removing any air bubbles. 3. Fry wontons in batches in hot oil until browned and cripsy. Summer Salmon Over Cilantro-Lime Rice with Kale - 4 tbsp lime juice, separated 1 tsp dried cilantro 1 tbsp honey 2 salmon fillets About 1/2 lb raw kale chopped 3-4 scallions diced 2 cups of cooked brown rice About 1/4 cup fresh cilantro Kosher Salt Whisk 2 tbsp of lime juice with 1 tbsp honey, 1 tsp of dried cilantro and a pinch of salt to make the marinade. Pour the marinade over the salmon and let sit while preparing the rice. Heat a non-stick skillet over medium heat and spray with non-stick cooking spray. add the kale, 1 tbsp of the lime juice and a pinch or two of salt. Cook for about a minute until wilting. Add the scallions, brown rice, cilantro, remaining tbsp of lime juice and another pinch of salt. Combine everything well allowing the flavors to merge. Heat a second skillet over medium-high heat and spray with non-stick cooking spray. Cook the salmon 2-3 minutes a side depending on thickness. After the first flip pour any leftover marinade over the fillets.

Simple, comforting, versatile and inexpensive it’s easy to see why it’s on high rotation in most family dinner repetoires. But sometimes pasta can get a little boring week after week. Which is when I look to Asia and the wonderful of world of noodles for inspiration to freshen things up. From fresh hokkien noodles, to dried rice sticks to soft Japanese udon noodles. There are so many options to choose from. And they’re fast. No need to boil for 10 minutes or more like pasta, just pour over some boiling water, soak for a few minutes and serve. I know the thing that holds me back from cooking Asian food is the long ingredient lists and the thought of having to buy a whole heap of different sauces that I’m only going to use every now and then. So I’ve tried to keep things simple. To cook all 5 dishes you’ll only need three sauces – soy, fish and oyster. If you haven’t cooked Asian before I’d urge you to at least invest in a bottle of soy sauce and start from there. So why not surprise the family with some noodle fun? japanese noodle soup with spinach serves 2 Udon noodles a lovely fat white Japanese wheat noodles. I’m still not sure how they can be all soft and fresh looking but come in packs that don’t need refrigerating. Noodle magic? They are brilliant to have on hand for a quick meal. If you can’t find bok choy, any other asian greens would work or you could just use a big bunch of English spinach. 1 packet 2 minute noodles – chicken flavour 1 bunch baby bok choy, separated into individual leaves 1/3 cup oyster sauce 1 teaspoon sesame oil Place about 2 cups water in a medium saucepan and add the flavour sachet from the noodles and bring to the boil. Add bok choy and noodles and simmer for 2 minutes until noodles are cooked and the bok choy is wilted. Drain and return to the pan. I’ve used Singapore noodles in this recipe which are a fine version of fresh hokkien noodles but I have eaten laksa with rice noodles and even a combination of the two so feel free to substitute. I’ve cheated a little on the 5 ingredient rule by including ‘mixed chopped vegetables’ as a single ingredient. I actually used a carrot, a zucchini and a red pepper, all cut into little batons. Chicken laksa is also really popular. Prawn or shrimps are lovely cooked in the spicy fragrant coconut broth. 3/4lb (350g) fresh Singapore noodles 2oz (60g) Laksa paste or other Thai curry paste 1 large can (1 1/2 cups) coconut cream 2 cups mixed chopped vegetables (see note above) handful fresh basil leaves Place noodles in a heatproof bowl and cover with boiling water. Allow to stand for 1 minute then massage to loosen into individual strands. Drain. Meanwhile heat 2 tablespoons of peanut or other vegetable oil in a large saucepan over high heat. Mexican Haystacks with Avocado, Tomato, Mango, and Cilantro on top of Brown Rice RICE 2 cups uncooked brown rice 1 bunch fresh cilantro MEAT 1 1/2 lbs ground turkey 1 onion, chopped 1 tablespoon garlic powder salt & pepper to taste 4 cups salsa (I used Kirkland organic salsa from Costco) TOPPINGS 1-2 avocados, chopped 1-2 red peppers, chopped 1-2 ripe mangoes, chopped fresh cilantro for garnish Start your brown rice in a pot on the stove, or in a rice maker. Next, add ground turkey and chopped onion to a large saute pan. Add garlic powder and salt and pepper. When the turkey is browned, add 4 cups of salsa. Bring the salsa to a boil and then reduce the heat to a simmer. Cover and simmer for about 20 minutes. In the meantime, chop the cilantro, pepper, avocado, and mango. When the rice is done, simply stir in almost all of the fresh cilantro, leaving just enough to garnish each dish. I served each person with the rice and meat already on the plate, and everybody had fun adding their own toppings. Kids always like to feel that they "made" their own dinner! I'd recommend serving this with a nice big green salad on the side. *Also, the recipe above made enough for our family of five to have leftovers the next day. If you are cooking for a smaller family, just chop one avocado, pepper, and mango. You can also make less rice and only 1 lb. of turkey. If you do this, reduce the salsa used to only 2-3 cups.
