Blue Moon and Corona Cupcakes For the beer cupcakes: 3/4 cups butter, at room temperature 1-3/4 cup sugar 2-1/2 cup flour 2 tsp baking powder 1/2 tsp salt 3 eggs, at room temperature 1 tsp vanilla 1/2 tsp orange or lime zest 1 cup Blue Moon or Corona beer, plus more for brushing on tops 1/4 cup milk Orange/lime wedges and sanding sugar for garnish - Preheat oven to 375 degrees and line 24 muffin tins with cupcake liners. - In a medium-sized bowl, whisk together flour, baking powder, and salt. - In the bowl of an electric mixer, beat together the butter and sugar until light and fluffy, about 2-3 minutes. - Add eggs, beating after each addition then add the vanilla and zest. - Combine milk and beer and alternatively add this mixture and the flour mixture to the butter/sugar mixture with the mixer on low speed, starting and ending with the flour. - Fill the cupcake liners 2/3 full and bake for 18 minutes, or until cake tester comes out clean. - When cupcakes are done, poke holes in the tops of the cupcakes with toothpicks and brush some beer on each while still warm.

Chicken Chicken Bombs Ingredients 5 boneless, skinless chicken breasts-makes 10 bombs 5 jalapenos, sliced in half lengthwise and cleaned 20 slices bacon 4oz cream cheese, softened 1 C colby jack or cheddar cheese, shredded S to taste 1 C BBQ sauce-I used Sweet Baby Ray's Directions Slice chicken breasts in half (like a hamburger bun), place between wax paper and pound until it’s ¼” thick. Season with S Mix the two cheeses together and smear about 1 Tblsp into each pepper half (just use up the cheese between all of the peppers). Place the pepper on the chicken breast and wrap it up as best you can. Isuggest placing the pepper cheese side down so it gets completely covered by the chicken. Wrap each chicken breast completely with two pieces of bacon. Start at one end, wrap half the breast and finish the second half with the other piece of bacon. Cook on apreheated 350 degree grill over indirect heat for 30 minutes or until chicken is done. Turn every 5 minutes and baste with BBQ sauce each time you turn it. For oven: Bake at 375 degrees for 30 minutes or until chicken is done. Baste a couple times and finish under the broiler to set the BBQ sauce. **Isuggest a400 degree oven and no BBQ sauce for the first 20 minutes, turning once to help cook the bacon. Danish fontina will not melt properly. If you absolutely can't find Italian fontina, brie (with the rind removed) will also work great here.INGREDIENTS1 1/2 lbs Italian fontina, rind removed and cubed into 1-inch pieces 6 cloves garlic, thinly sliced 1 tbsp fresh thyme, chopped 1 tsp fresh rosemary, chopped 3 tbsp extra virgin olive oil 1/2 tsp Kosher salt 1/2 tsp freshly ground black pepper INSTRUCTIONS: Adjust top rack of the oven so that it sits about 5 inches under the broiler unit. Spinach Artichoke Pasta - better than the dip Do you love spinach artichoke dip? I sure do. I don’t make it that often and when I realized I wanted it today, I thought it’d be interesting to make it into a main dish or entree. Enter pasta and we have a fantastic combination. This pasta dish tastes just like the dip. It’s hearty, creamy, and filling. It’s very rich so I would recommend having it paired with something else – salad would be great. I ate a small portion of it and was stuffed. Enjoy! 1 12-oz box pasta (I used bowties) 1 tsp butter 2 cloves garlic, minced 1 8 oz package reduced fat cream cheese 1/2 cup milk 1/2 cup reduced fat sour cream 1/2 lemon, juiced 1/2 tsp salt 1/4 tsp red pepper flakes 1 14 oz can artichoke hearts (packed in water), drained and chopped 10 oz chopped, frozen spinach, thawed, with as much excess water squeezed out as possible 1/2 cup parmesan cheese, shredded Additional Parmesan for serving Cook pasta according to package directions. In a medium saucepan over medium heat, melt butter and add garlic. Cook until fragrant, about 30 seconds. Add cream cheese and stir until melted. Slowly stir in milk, then add sour cream, lemon juice, salt and red pepper flakes. Stir in artichoke hearts, spinach, and parmesan cheese. Drain pasta and add to artichoke mix. Toss and season to taste with salt and additional lemon juice as needed. Serve with additional shredded Parmesan :)
