Weekly Meal Plan/ Week of April 29: Sauteed Garlic and Tomato Lentil Salad / will have it with the black bean burger patties
Summer Lentil Salad >> I enjoyed this a lot! This may be my new favorite lunch item. Next time will add a little more mustard though since I really like mustard.
BBQ Sloppy Lentils (vegan). I added fresh garlic (3 cloves) and substituted onion powder for mustard powder. I also added 1 large shredded carrot and chopped celery (small). I think because of the added veggies, it needed more water. Very good!
Mini Pizza Quinoa Bites-----2 cups cooked quinoa, cooled 2 whole eggs 2 egg whites 2 cups chopped pizza toppings 1 cup shredded mozzarella cheese 1/4 grated parmesan cheese 1 teaspoon Italian seasoning Pizza sauce Oven to 350 degrees, spray a 24-cup mini muffin tin VERY well with nonstick spray.Mix all ingredients except pizza sauce. Fill mini muffin tin cups place on prepared baking sheet and bake for 15-20 minutes, or until golden brown.. Serve with pizza sauce.
