Cafe Rio Chicken (CrockPot) - 2lbs chicken breast, 1/2 small bottle of zesty italian dressing, 1/2 tbsp minced garlic, 1 pkt ranch dressing mix (mixed w/ 1/2 C water), 1/2 tbsp chili powder, 1/2 tbsp ground cumin. Place all ingredients in crockpot, cook on high 5-6 hr or low 8 hrs. Shred w/ fork and serve how ever you want, great in tacos, burritos, salads, alone, etc!
How to Bake Chicken Breast that are Moist and Tender
Preheat 325ºF. Line large baking dish with foil Pat boneless skinless chicken breast dry with paper towel. Place in baking dish. Lightly drizzle both sides with olive oil and sprinkle with salt and pepper (or fave seasonings). Bake 25-35 min (do not open oven or rotate chicken while cooking), until 165º meat temp, and is no longer pink inside. Remove from oven; Let sit a few minutes before serving. OR Store in fridge 3-4 days. Freeze shredded or chopped pieces for at least 3-4 months.
