Beefy quesadillas! These quesadillas use a burrito-style filling which consists of taco seasoned ground beef, refried beans, and green chilies. You can use whatever type of cheese you like but I prefer Mexican cheese blend. These quesadillas go great served with salsa, guacamole, and sour cream. This dish has so many things going for it, that there wasn't much chance it would be a FAIL, First of all....it's TACOS! I honestly don't think I've ever met anyone that doesn't like tacos in one form or another. It's quick and easy to make. It's got a "Make Your Own" aspect to it...which always makes me happy. AND...it's gluten-free! Oh yeah...and it's delicious.
Buffalo chicken casserole: lbs chicken c buffalo sauce, 1 c ranch/blue cheese, c cheddar, 5 c shredded potatoes/hash browns, 1 can cream of chicken soup... im made this tonight for my family and they loved it... instead of potatoes i used noodles thought.

FRITO PIE CASSEROLE 1 bag Frito's 1 can Ro-Tel shredded cheese 1 med. onion, chopped 1 tsp. salt 1 lb. ground beef, taco seasoning Brown beef with seasoning, onion and salt. Then layer meat, Frito's, Ro-Tel and cheese in baking dish. Bake 30 minutes at 350 degrees or until cheese melts through mixture
BURRITO CASSEROLE 1 lb ground beef 1/2 onion, diced 1 (1.25 oz) pckg taco seasoning 6 flour tortillas 1 (16oz) can refried beans 2-3 C shredded sharp cheddar 1 can crm of mushroom soup 4 oz sour cream Preheat oven to 350 deg. In skillet brown meat w/onion. Drain. Add & beans. In bowl combine soup & sour cream. Spread half of cream mixture in baking dish. Tear up 3 tortillas, place them on cream mixture. Put half of meat mix over tortillas. Top with half of cheese. Repeat. bake 20-30 min
