Caprese Skewers ~1 pint cherry tomatoes 1 bunch basil leaves 8oz fresh mozzarella cheese Balsamic vinegar, for drizzling 2-3 dozen long toothpicks/skewers ~Slice tomatoes in half. Slice mozzarella in chunks. Slide mozzarella on toothpick. Fold basil leaf in half or thirds,nestle next to mozzarella. Slide tomato on bottom of skewer, Drizzle lightly w/vinegar.
BASIL PESTO: Most basil pesto recipes call for pine nuts but you can easily substitute walnuts. Serve with pasta or on baked potatoes.
