Ultra-Crispy Roast Potatoes: Microwave quartered potatoes for 10 minutes. Drain water. Drizzle a fair amount of olive oil over the potatoes, gently toss the potatoes, and sprinkle with oregano. Put in a hot oven 450 degrees for about 20-25 minutes until crispy. Watch closely.

Roasted Red Potatoes (425* for 30 minutes) Dice them up into 1/2 inch squares, toss them with salt, pepper, olive oil, a little lemon juice and chopped rosemary. (These were fabulous, cook directly on sheet pan - no foil lining the pan because they stuck and didn't get crispy)
