Cranberry Pecan Salad with Feta CheeseAfter having something similar in a restaurant, I just had to start making these at home. Now I'm addicted! When they are in season, I substitute fresh blueberries and/or strawberries for the dried cranberries. Also delicious!
Pack this crunchy chicken salad for a picnic the next time you dine al fresco. To save time, use leftover chicken pieces, or precooked frozen chicken that you can simply cook up and cool. To make it a little sweeter, toss in an 11-ounce can of mandarin orange slices, drained.
