Overnight Banana Coconut Oatmeal: 2 bananas, chopped 1 cup steel cut oats 3.5 cups water 1/2 cup half & half or milk 4 tbsp shredded coconut Pinch ground nutmeg Put it all in a crock pot (minus one banana) and put it on low/warm for 8 hours. Trying to decide which recipe to use...Another baker commented, "oatmeal banana cookie - baked - no sugar added (just the banana). I omit most of the butter and use applesauce. I also added a little wheat germ and flax seed. Could probably add some protein powder as well."
