    Great idea!! Make cake time less of a hassel. I did this for my son's 4th birthday party and it was fantastic! The night or morning prior to the party; take ice cream out of the freezer and allow to soften on your kitchen counter for 8 to 15 minutes (time will vary slightly depending on type - ice cream/frozen yogurt/sherbert etc.) Line muffin tin with cupcake liners and scoop ice cream into the liners. Cover with plastic wrap and return to freezeer until party time!

    My mother used 1 can Evaporated milk, 1/2 sugar, vanilla and snow mixed until it was the right thickness. It was so good too.

    I found a recipe that called for 1 can of sweeten condense milk, that way you didn't have to use the milk, vanilla and sugar.

    That's an awesome idea... But...As cool as this sounds, I think I'm gonna have to leave it to the younger, nondiabetic generation.. ;). Makes me wish I was young enough to enjoy this with my kids again.. We always used to look for things to do.. They would have enjoyed this! I hope other Moms read about your Mom's recipe, tho.. That really makes things simple!! :)

What a great, smart idea for birthday parties. Pre-scoop your ice cream, insert a small wooden spoon, roll in sprinkles, refreeze. When it's party time, it's ready!
