JO: Crunchy Black Bean Tacos - these are SO good. They really do crisp up. They taste like real Mexican food. If I had made a full recipe, I would have had enough for a dozen generously stuffed 6" tortillas.
Chicken taco chili...only about 200 calories a serving and made 8 servings! 1 can black beans, 1 can kidney beans, 1 can corn kernels, 16 oz tomato sauce, 28 oz diced tomatoes, packet taco seasoning, 1 tbsp chili powder, 3 boneless chicken breasts. 6 hours high or 10 hours low in the crock pot.
Chicken Taco salad that's HEALTHY! There's black beans, corn, green peppers, tomatoes, cilantro, green onions, chicken, avocado tortilla chips. All tossed together with a taco ranch dressing made with Greek yogurt.

Sweet Potato, Black Bean & Kale Quesadilla (I would use goat cheese instead of cheddar)...YUM! All these (organic) ingredients are available at Trader Joe's! Including the Organic Whole Wheat Tortillas! Easy as pie! :)
Tortilla and Black Bean Pie Recipe - I've made this before. Laugh all you want at tortilla pie, it's delicious! And anything that gets a 10-year-old picky eater to eat vegetables is okay by me. Make it corn tortillas and do gluten free!
