    1 lb Italian sausage


    2 Garlic cloves
    2 cups Kale or 2 cups swiss chard

    2 Russet baking potatoes, large

      This is a clone of the Olive Garden Zuppa Toscana. Tried and true, approved by former Olive Garden chefs - maybe use some summer sausage, spinach, and cream of potato soup. Maybe some broth and potato flakes to thicken it. Sounds so tasty!!!

    I finally made this tonight. LOVED IT! There was a LOT of liquid, but I have an OLD crockpot that does not cook as hot/fast as the newer ones so maybe that's why. I did blend some cornstarch and water and add it to the sauce 30 minutes before serving, which thickened the sauce up nicely. I also added 1/2 a can of pineapple chunks, bell pepper, and onion 30 minutes before serving as well. Got a thumbs-up from the hubs!
