Skinny Slow Cooker Beef Enchiladas: a delicious dinner that makes a bonus meal: French Dip Sammies. I love double duty meals. They are a cornerstone in my Shrinking On A Budget Meal Plan service. I might play around with this Double Duty meal idea.
SLOW COOKER ENCHILADA! This "Taste of Home" recipe is one we've been making for about 10+ years. It is so good and versatile! We usually add/substitute ingredients each time we make it, so it is always a new taste. Sometimes we add corn...or extra cheese...or salsa...or taco seasoning packets instead of the separate seasonings...or chicken instead of beef...etc. Enjoy!
