Three Cheese Broccoli, Prosciutto and Roasted Red Pepper Stromboli. I didn't get a dripping cheese photo, but trust me, the gooey amount of cheeses almost oozed to the floor when hot!

*Spinach & Feta Stuffed Peppers. I used Far East Quinoa & Rice. Doubled the entire recipe, splitting between 7 bell peppers of varying sizes. Skipped the asparagus for a little extra corn and spinach. Mixed about 1/4 cup feta in with the filling rather than on top. Roughly 3p+ per pepper. 125 cals.

Potato Hash with Bell Peppers and Fresh Garlic....ngredients 2 Tbsp. olive oil 1 Tbsp. unsalted butter 4 large or 6 medium potatoes, peeled and cut into ½” cubes 1 onion, diced 1 red bell pepper, diced 2 tsp. fresh parsley, chopped 3 garlic cloves, minced Salt and pepper, to taste 1/4 cup freshly grated Parmesan cheese

Pulse until finely chopped. Add Parmesan, red pepper, basil leaves, salt and pepper. Pulse until well combined. -- add olive oil through the feed tube and process until incorporated.
