Roasted Red Pepper & Goat Cheese Alfredo :: 2 whole red bell peppers 2 tablespoons olive oil 1 small onion, diced 2 cloves garlic, minced 1 cup fat free half & half 4 oz. garlic & herb goat cheese 2/3 cup grated parigiano reggiano cheese 1/2 cup artichoke hearts (optional) 1/2 lb. linguine, cooked to al dente salt & pepper, to taste
Three Cheese Broccoli, Prosciutto and Roasted Red Pepper Stromboli. I didn't get a dripping cheese photo, but trust me, the gooey amount of cheeses almost oozed to the floor when hot!
3 cloves garlic 1/3 cup pine nuts 1/3 cup grated Parmesan cheese 1 cup roasted red bell pepper (fresh or jarred) 1 cup basil leaves ½ tsp. salt ¼ tsp. pepper 1/3 cup extra virgin olive oil 1 lb. penne pasta ¼ cup heavy cream, optional DIRECTIONS: Place garlic and pine nuts in a food processor. Pulse until finely chopped. Add Parmesan, red pepper, basil leaves, salt and pepper. Pulse until well combined. -- add olive oil through the feed tube and process until incorporated.
