Lentil, Quinoa and Feta Summer Salad. WOW! Quinoa, green/brown lentils, carrots, peas, cucumber, garlic, scallion, mint and feta. A little dressing with ginger, cumin, lemon juice, dijon mustard, cider/wine vinegar and olive oil just makes this zing.
