Always looking for a great recipe for lighter fare.

I tried this recipe and there are several problems. I think that the parboiling actually made the chips less crisp and the cooking time was twice (30-40 minutes) than the recipe advised. The chips need to be extremely thin. I might raise the temperature to 400C, skip the parboiling and turn the chips at least once during cooking.

Rissoto - never tried but always see on Iron Chef so is on my "to try" list

butternut squash soup

  • Lea Turpin

200 degrees roasting for butternut squash took forever - I finished the squash off by steaming for 10 mins. Added heirloom tomato and 1 dollop of greek yogurt for garnish.

  • Sarah Hearn Carmichael

Yes...200 degrees does take forever! I cranked up the heat in the oven to 350.

  • Tonya Alan

The recipe says 200 def C. You have to convert to get F

  • Lea Turpin

Yep, at least 400F. Steaming really brings out a different richness in the squash. I recommend it.

Take a sharp knife and poke the hard squash, then microwave on high for 5 minutes. Cool, wrap and place in the fridge. Make your soup the following day!
