I used chocolate devil's food cake mix. Put a SMALL spoonful into the cupcake cups and bake, then put in the freezer so they get cold. Set out ice cream to let it get soft, fill the rest of the cupcake cup with ice cream - put back in the freezer so they set up together. Top with whip cream and serve. Taste JUST like ice cream cake! Awesome.

Pour into Freezer safe container (or posicle forms, I recommend small, the ones I used hold a little over 1/3 cup). Impatiently wait for it to freeze then devour. If making with almond butter follow recipe exactly just swap nutella for almond butter. It's still very good and a great substitute for ice cream cravings. Peanut Butter Banana Bread - Skinny Chef (I'll start by saying I don't know how "friendly" this will be for WLS patients, but it does call for whole wheat flour & natural peanut butter. The one thing I'd change would be the brown sugar; I'd used the Splenda(?) brand instead. 1 1" slice has 36g carbs & 8g protein as originally written; I've no idea how much using Splenda would change things, but it's definitely a treat to be had when you've "been good" the rest of the day! ~TH)

This is the no bake, chocolate, peanut butter cookie recipe I normally use. It always turns out you don't even need wax paper just drop it on baking sheets :) I'm thinking of modifying the recipe a bit to make a oatmeal, peanut butter, cinnamon, no bake cookie. I'm fairly certain it can be done by just omitting the chocolate. Maybe I will cut down the amount of sugar too as these are very sweet.
