      Lovely. Simple. Delicious. Pan Seared Scallops. Dry the scallops. DRY THEM! Salt/Pepper both sides. Heat heavy skillet on super high.. yes, super. A bit of olive oil. 2mins side one; 1min side 2. Remove to plate. Reduce heat to high. Melt a pat of butter... real butter. Add some good white wine and scrape up bits from pan. reduce. Sauce the scallops and serve.
