    Vegetable Tian

    Vegetable Tian ~ Ingredients: 1 tablespoon olive oil 1-1/2 cups diced sweet onion, 1-1/2 teaspoons minced garlic, 1 medium zucchini thinly sliced, 1 medium yellow squash thinly sliced, 1 medium baking potato thinly sliced, 3 medium tomatoes thinly sliced, 1 cup shredded Italian cheese blend, Italian seasoning to taste, Salt and pepper to taste.

    Italian Hassle-Back Zucchini. Made this last night for dinner as a side dish. Only two things I would do different. 1. Instead of slicing the garlic I would just chop it very finely. 2. I would increase the cooking time to about 45 minutes. It had a wonderful flavor and it's healthy (~_~)

    Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, pepperoni(optional), salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft
