Vanilla Chia Seed Pudding.1 1/4 cups lite coconut milk (or any type milk will do...it's the seeds that turn it to pudding) 2 tablespoons pure maple syrup 1/2 teaspoon pure vanilla extract 1/4 cup chia seeds. Mix and refrigerate 3 hours or overnight. Enjoy!

3 tbsp chia seeds 1 cup organic almond milk 2 tbsp dried unsulphured organic cranberries 1/2-1 tsp cinnamon 1/4 tsp all spice 1/8 tsp cardamon 1/2 tsp vanilla 3 drops liquid stevia diced strawberries, raspberries & blueberries for toppings raw almonds, cashews & sunflower seeds for toppings (preferably soaked over night) fresh mint as garnish or topping
Chia Seed Pudding. Yum! I made this 3/21/13 and it was excellent. I used 1 tbs chia seeds, 1/2 cup crushed pineapple, 1 Splenda, 1/2 cup unsweetened vanilla almond milk and 1 tbs Torani sugar free chocolate. It was SO good! As dessert or breakfast - E. :) yummy warmed up for 1 1/2 mins in microwave
