Lavender Blackberry Scones | Joy The Baker Lavender Blackberry Scones makes 10 to 12 scones Print this Recipe! 3 cups all-purpose flour 1/3 cup granulated sugar 1 tablespoon dried lavender 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 teaspoon salt 3/4 cup cold unsalted butter, cut into small cubes 1 large egg, lightly beaten 3/4 cup cold buttermilk 1 cup fresh blackberries(you can used thawed and drained berries from the freezer although the scones will have a more purple color) 1 beaten egg and granulated sugar for sprinkling on top before baking Place a rack in the upper third of the oven and preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside. In a mixing bowl, sift together flour, sugar, lavender, baking powder, baking soda, and salt. Cut in butter (using your fingers or a pastry cutter) until mixture resembles a coarse meal. Work the butter into the dry ingredients until some of the butter flakes are the size of peas and some are the size of oat flakes. In another bowl, combine egg and buttermilk and beat lightly with a fork. Add to flour mixture all at once, stirring enough to make a soft dough. Fold in the blackberries. Turn out onto a floured board and knead about 15 times. Roll or pat out into a 1-inch thickness. Cut into 2-inch rounds using a round cutter or cut into 2×2-inch squares. Reshape and roll dough to create more scones with excess scraps. Place on an ungreased baking sheet. Brush lightly with beaten egg and sprinkle with granulated sugar. Bake for 15-18 minutes or until golden brown on top. Serve warm. Scones are best the day they’re made, and though they can be frozen and lightly reheated in the oven if you need a future treat.

Add cheese, salt, pepper, olive oil, and lemon juice to the couscous. Stir to combine. Add mustard, capers, and lemon zest and stir to combine, making sure the mustard is evenly distributed. Finally, stir in the pecans, blueberries, and parsley. Season to taste. Chill until ready to serve. When ready to serve, toss in a handful of salad greens and toss to combine.

The balance is divine!"IngredientsFor the Crust: 1/2 cup (4 oz) cold unsalted butter, cut into small cubes 1 1/2 cup all-purpose flour 2 tsp granulated sugar 1/2 tsp salt 1/3 cup cold buttermilkFor the Filling: 1/2 cup (1 stick) unsalted butter, melted 1/2 cup granulated sugar 1 tbsp white cornmeal Scant 1/2 tsp salt 1 vanilla bean, split and scraped (or 2 tsp pure vanilla extract) 3/4 cup honey (I use raw sage honey) 3 large eggs 1/2 cup heavy cream 2 tsp apple cider vinegar 1-2 tsp flaked sea salt (I used Vanilla Sea Salt)Directions To make the crust, in a medium bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and, using your fingers (or a potato masher), work the butter into the flour mixture. Quickly break the butter down into the flour mixture; some butter pieces will be the size of oat flakes; some will be the size of peas. Create a well in the mixture and pour in the cold buttermilk. Use a fork to bring the dough together. Try to moisten all of the flour bits. Add a bit more buttermilk if necessary, but you want the mixture to be shaggy and not outwardly wet. On a lightly floured work surface, dump out the dough mixture. It will be moist and shaggy. That’s perfect. Gently knead into a disk. Wrap the disk in plastic wrap and refrigerate for one hour. Allowing the dough to rest in the refrigerator will help rechill the butter and distribute the moisture. To roll out the pie crust, on a well-floured surface, roll the crust 1/8-inch thick and about 12 inches in diameter. Transfer it to a pie pan. Trim the edge almost even with the edge of the pan. Fold the edges under and crimp with your fingers or a fork. Cover it with plastic wrap and refrigerate it for a minimum of 30 minutes and a maximum of three hours. Preheat the oven to 375 degrees. Place a rack in the center of the oven. To make the filling, in a medium bowl whisk together melted butter, sugar, cornmeal, and salt. Split vanilla bean and add the vanilla bean scrapings (or extract, if using) into the butter mixture and whisk until thoroughly combined. Whisk in honey. Add the eggs, one at a time, whisking to combine. Whisk in heavy cream and vinegar. Pour the filling into the prepared pie crust. Bake pie for 45 to 55 minutes until pie is deep golden brown and puffed around the edges and set in the center. Open the oven and rotate the pie halfway through baking. Remove from the oven and allow to rest for at least four hours before serving. Serve warm or at room temperature, and sprinkle with sea salt just before serving.
