    Jiffy Corn Dog Mini Muffins: 8.5 oz box of Jiffy Corn Muffin Mix; 1 egg, slightly beaten; 1/3 cup skim milk; 1 tbsp honey; 4 hot dogs, each cut into 5 pieces. Spray mini muffin pan with cooking spray.  In a med bowl, combine the mix, egg, honey & skim milk.  Allow to sit for 3-4 min.  Stir batter.  Fill each muffin well with about 1/2 tbsp batter.  Place a piece of hot dog into each well, pressing in.   Top with a tsp. of batter. Bake @ 400, 10-15 mins. Allow to cool for 5 mins.

    Corn Dog Mini Muffins. The corn bread didn't blend with the hot dogs very well, so when you took a bite, the hot dog piece might fall out. It was like eating hot dog bites and corn muffins separately, but both were kind of bland. Didn't use a Jiffy mix- just regular corn meal muffin recipe. Maybe that would have helped?

Servings - approx 20 mini muffins Servings size - 1 mini muffin Points plus per svg - 2 points+ Calories - 79, Total Fat - 3.2g, Carb. - 11.3g, Protein - 2.1g, Fiber - 0g 1-8.5 oz. box of Jiffy Corn Muffin Mix 1 egg, slightly beaten 1/3 cup skim milk 1 TBS honey 4 Oscar Mayer Turkey Hot dogs, each cut into 5 pieces 1. Spray the wells of a mini muffin pan with cooking spray. Preheat oven to 400 degrees F. 2. In a med bowl, combine the mix, egg, honey and skim milk. Allow to sit for 3 - 4 min. Stir batter. 3. Fill each mini muffin well with about 1/2 TBS batter. Place a piece of hot dog into each well, pressing in. 4. Top each hot dog with about a tsp. of batter, covering hot dog. 5. Bake in oven for 10 - 15 min. or until golden brown. Allow to cool in pan for 5 min. before removing to platter.

How to make homemade corndogs. For the batter I use: 1 cup cornmeal, 1 cup flour, 1 1/2 cups milk, and cajun seasoning. Roll the hotdog in cornstarch before battering to make the batter stick. Use leftover batter to make hushpuppies! Just add corn, chopped jalepenos, onion and cheese. Fry and enjoy!

Corndog Muffins. Y'all these are so damn easy it's gonna piss you off YOU didn't think of it!! Well it pissed me off haha Make a box of cornbread mix, pour into cupcake tins but DO NOT OVER FILL!!! I recommend about 1/4 way. Cut hotdogs in thirds, stick one cut. Dog in center of each muffin and cook as box says. GREAT with ketchup ;) -Dr. House
