Dark Chocolate Oatmeal with a Side of Minted Blueberry Yogurt from pg 101 in my newest book S.A.S.S! Yourself Slim

My recipe: broccoli slaw dressed with a combo of brown rice vinegar, fresh squeezed OJ, fresh grated ginger, orange zest, roasted garlic and white pepper tossed with black sesame seeds. You can pair this with or add any lean protein (shrimp, chicken, beans, tofu…) and a whole grain (pita, crackers, or throw in cooked, chilled whole grain noodles). Lots of layers of flavors!

Ingredients: 1/2 C chunked eggplant 1 C halved baby Brussels sprouts 1/2 C chickpeas 1/2 C minced onion 1/2 T EVOO 1/2 T minced garlic 12 grape tomatoes, halved 1/2 C cooked brown rice pasta 3 lg fresh basil leaves, sliced  oven to 350 degrees. Place eggplant, Brussels sprouts,  and chickpeas on a cookie sheet. Mist with cooking spray and roast for 20 minutes.
