Creamy Chicken Enchiladas - these are super super rich, def not diet friendly. I usually don't like enchiladas made with flour tortillas but since there wasn't sauce on the bottom, and the top browned up, these had a pretty nice texture. I used can chicken & green chillies instead of tomatoes. There was just something missing, not sure what. Would like to try again but not sure what to change.
