Marsala Chicken-and-Mushroom Casserole: Confession. My husband and I ate almost the entire pan it was so good. We used orzo pasta in lieu of rice and it was wonderful. The hubs thinks we should up the marsala wine amount next time so we can taste it more, food for thought!
Butternut Squash-Chicken Pan-Roast Recipe -- ABSOLUTELY DELICIOUS! Honestly, WAY WAY WAY better then I was expecting. I added an onion, and an extra 1 tsp of sage. I also used about 4 tablespoons of butter. EXCEPTIONAL!!!!!!!!!!!!! (I plan to use the leftover squash and apple mix in the morning with bacon and eggs!)
