BAKED Salmon. Recipe calls for grilling, but I baked 3 lbs of fillets @375 for about 15, then turned off the oven and let it sit while we all ate salads. FANTASTIC served over sauted spinach/garlic with brown rice pilaf on side. just a wonderful meal!

Perfect Grilled Salmon. 6-8 ounce skin-on salmon fillets, kosher salt, & olive oil. Preheat charcoal grill to 375. Cover all sides of fillets with light coating of olive oil. Sprinkle well with salt. Oil grill grate with high temp vegetable oil. Place fillets on grill, skin side down. Grill covered for 8 minutes. Flip & grill covered for an additional 3 minutes for medium. Adjust cook times to preferred doneness. Remove from grill & Enjoy. Optional: season with dill or lemon if desired.
