Spicy Sausage Pasta

Serves 4

Meat

1 lb Sausage, smoked

Produce

2 cloves Garlic
1 1/2 cups Onion
1 (10 oz) can Ro-tel tomatoes and green chiles, Mild
1/3 cup Scallions

Canned Goods

2 cups Chicken broth, low-sodium

Pasta & Grains

8 oz Penne pasta

Baking & Spices

1/2 tsp Salt and pepper

Oils & Vinegars

1 tbsp Olive oil

Dairy

1/2 cup Heavy cream
1 cup Monterey jack cheese

    Spicy Sausage Pasta~ Yummy! I tweaked it a little to use what I already had at home-Eckrich Skinless Smoked Sausage. I'll try the turkey sausage next time. I used the Birds Eye Recipe Ready chopped onions & peppers. I mistakenly poured in chopped jalapeño peppers instead of chopped green bell peppers. I removed as many as I could; it still turned out delicious! I also added fresh chopped cilantro. I deleted the cheese & onions to avoid an upset stomach. Topped off with garlic toast.
