Quinoa Mac n' Cheese. Made this for dinner and was a huge hit. Added chopped frozen spinach, broccoli and cauliflower. Such a success, my husband didn't even put ketchup on it and he adds ketchup to EVERYTHING!!!!
Recipe: How to Make Quinoa Salad Katid says: THIS WAS AWESOME. Used red quinoa. I added in ground turkey. Jeff ate his as is in the recipe. We both loved it. Healthy and yummy. I couldn't find the S&W jalepeno black beans, so just used regular and chucked in some diced jalepeno. YUM! Update: Still a favorite. Doesn't wear out.
Baked Zucchini fries - These are so easy to make and absolutely delicious! Try dipping them in eggs whites and tossing them in Ideal Protein southwest cheese curls, for some extra flavor.... OR make them unrestricted and use Ideal Protein garlic and fine herb crisps! :)
