    Regarding the flour types: Bread flour has more gluten than cake or all purpose flours. The bread flour will make the cookies more chewy and the cake flour will give the cookies some tenderness. They are all different types with different amounts of gluten.

    Bread flour is also much more dense, more protein, surprised to see it in a cookie recipe. But cool!

    Hi Mary Ann! I did not post this recipe, just commenting about the different types of flours. I would guess about 1 cup chocolate chips, more as you like. Penny
