    Pancake Pops by Melissa at No. 2 Pencil Makes about 20 bite size pancakes 1/2 cup all-purpose flour 1 tablespoon of sugar 1 teaspoon of baking powder 1/4 teaspoon of baking soda 1/4 teaspoon of kosher salt 1/2 cup of fat-free plain greek yogurt 1-2 tablespoons of milk, depending on the thickness of the yogurt you use 2 tablespoons of melted and cooled butter 1 egg, lightly beaten Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk to combine. Add greek yogurt, butter, and lightly beaten egg to the same bowl. Add enough milk to make batter stir-able, 1-2 tablespoons depending on the thickness of the yogurt. Pancake pops are perfect for a brunch, a shower, or just a fun breakfast for your family. They are really sturdy, so you can even display them standing up, using a piece of craft foam as a base. Kids of all ages will love them!
