Low-Roasted sweet potato rounds -- slice sweet potatoes into 1/2 inch rounds. Brush both sides with olive oil. Sprinkle generously with salt and pepper. Roast at 350 for 30 minutes, turning once. Raise temp to 400. Roast 15 – 20 minutes until golden brown
I thought I had a great idea, apparently I did, others have done this before me! I love sweet and savory flavors with my sweet potatoes, so that's the path I took. You could also add some heat to kick it up. These would be even more delicious cooked on the grill or smoker.
There are several methods to baking a potato, but this is my favorite because the potato skin is crispy and salty and the insides are soft and fluffy. - Also saw Alton Brown do this method. It works great! No more bland potatoes!
Tomato-Potato-Zucchini-Summer Squash Casserole. STS: This is a keeper! I replaced the onion with sweet potato and sprinkled a little Parmesan cheese on top. A mandolin makes this easy. I finely chopped the leftovers and added them to commercial spaghetti sauce for our spaghetti dinner on the next night.
