Southwest Meatball Skillet - While the chili pepper in adobo sauce adds a lot of nice flavour, it also adds a LOT of heat. Consider leaving it out when serving this dish to kids and others who are just as sensitive. You can also make the meatballs ahead by baking them in a 400 F oven for 15-20 minutes.
