Eat Yourself Skinny: Cinnamon-Sugar Muffins...Update: I made these again and added 2 bananas (mushed up) to batter before baking -- highly recommend this addition!

Cinnamon & sugar muffins - These were just okay. Didn't really rise much so they ended up really short and dense. Wouldn't make again.

Healthy Cinnamon Sugar Apple Muffins - Loaded with apples and made with whole wheat flour, coconut oil, and less refined sugar. 230 calories.

1 cup flour ½ tsp cinnamon ¼ tsp salt 1 tsp baking soda 3 tbsp melted butter, ½ cup maple syrup or honey 1 egg, beaten 1 tsp vanilla extract 1 cup grated zucchini ½ cup grated carrot ½ cup raisins Preheat oven to 350°F. Mix dry ingredients. Mix wet ingredients. Add dry to wet. Add zucchini and carrots. Fill each cup in the mini muffin pan approximately ¾ full. Bake for 15-20 minutes

APPLE MUFFINS - Recipe is a good start. I would add more FLAVOR. Some vanilla and some cinnamon to the batter mixture. Definitely some extra cinnamon to the crumb topping. -Brooke
