How did I NOT know this? Never boil corn again! Want to know the easiest way to cook corn on the cob? Throw it in the oven at 350° for 25-30 minutes. That’s it. Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn. The husk and silk will peel away easily once it’s cooked. Cut off the large end and it slides right out with no silk. We do this all the time.....good on the grill too!

Toss chopped peppers, potatoes, zucchini, red onion and sausage (I used turkey kilbasa) with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this.

Finally! A store-bought salad dressing made with healthy fats (organic olive oil), instead of canola/soy/etc... Also, no sugar added! We usually make our own but it's so nice to have this in the refrigerator for meals in a hurry! #tessemaes #justeatrealfood

A twist on a recipe created by Lucinda's Italian relatives, these oven-baked fries are tossed in olive oil, grated cheese, and a medley of dried herbs. Sprinkle them with salt and pepper while they're still hot, and serve immediately. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).
